I'm thinking of siphoning some must onto the yeast cake of a weisenbock made with 3068. I'm looking for a mead that will retain some sugars (12.5 lbs honey for 5 gal) and will take on some interesting clove and/or bannana flavors. Would i need a blow off tube for a 5 gal carboy? Any warnings or other thoughts?
