Hey, thanks for all your help with my questions.

Do you think I could use two 4 gallon(instead of 5 gallon) stockpots with 6 lbs. of grain, and just reduce my water quantitiesfrom 2 to 1.75 gallons in each pot? Or are the measurements of 2 gallons for the mash and sparge too specific for any wiggle room?

If I lose .75 of a gallon to the grains that will leave me with 2.75 gallons of wort for my boil. This should give me enough room in my 4 gallon pot to still add my extract and do the boil I think.

You may need to do a late extract addition, as your water will be close to 3 gallons and with expansion, you will be reaching the top of that pot. or you could split the boil and the hops between the two pots. It will still work, tho, sure.

FYI: you might get a response faster if you posted this question in my "Easy PM Brewing" thread ;)
