    When I searched for the same thing, there were people split between sealing halting any aging, and those saying it helped. I would imagine it adds more protection. And doesn't lack anything, because aging in a carboy with airlock doesn't exactly allow the transfer of air. I doubt a cork...

    Carbonating after a 45 day primary ferment?

    Hydrometer will tell you if there are sugars left or not. Sparkling you want to be as precise as possible to avoid bottle bombs.

    Most people recommend 6 months to 1 year minimum. But if it tastes good drink it when you will imo. Or set a bottle or two aside to drink later on and discover for yourself if its worth it.
