I forgot to add that I use fermcap this time. Still the same issue. I have never had the banana/fruity ester flavor in my beers that you are encountering. I will try the next time to not use the fermwrap during the active fermentation. I mostly use it anyway to bring up the temp near the end...

While I have a lid I don't plan on using it. I will just gravity feed into the pump and over to the plate chiller. Being before the chiller I think I will get an advantage of also filtering out any break.
Thought I would post up a few pics of my homemade hop back that I just finished. Basically it's a 2qt Polarware bain marie with some fittings welded onto it. I haven't done a brew on it. Plan to use it next brew session in place of 0 minute/whirlpool additions.

Update: I ended up TIG welding a little bit ago a couple of 5/16 - 18 nuts to the underside of the false bottom on either side of the dipe tube hole. I then put a couple of 5/16 -18 x 1 1/2" bolts into the nuts and mounted it up.
