    High Gravity Partial-Mash Partial-Boil Brewing

    Why not partial mash, add your LME and then your hop additions all in the kettle, put that in primary and then fill the primary with cold water until you reach five gallons? This will lower the temp. of the wort faster so you can pitch your yeast quicker.

    The more you open it up the more chances you have of an infection. That being said people do open them up to take hydrometer readings. Why do you want to add more sugar?

    I'm not sure the cherries will mix well with the honey and brown sugar. When I used honey I wasn't real impressed with the results. I prefer caramel, but that's just me. The S-04 is what I'm going to be using next, from what I've read most people seem to have had great results with that...

    I would hold off on the candi sugar and use caramel. I use the 3787 with great results.

    He could wait for it to hit his target gravity, bottle, give it some time to carbonate, then cold crash and probably still end up with a sweet cider. As long as he uses plastic bottles or swing top bottles there shouldn't be a problem with bottle bombs.

    If the yeast die from to much alcohol then adding more yeast won't help. What abv were you going for? Why so much sugar? If there has been a change in gravity then ferementation IS taking place.

    Depends how far you want to drive. I always enjoyed the little German town Fredericksburg. It's a brewery/restaurant that serves great food and they have beers that are seasonal so there is always something different. There's a park nearby called enchanted rock, awesome motorcycle ride.

    I'm trying to figure out a way to produce some cider fast, within a month or two. My idea is something similar to Mr. Beer, two weeks or 1 month in primary, prime and bottle.     Wyeast 3739 - An animal!

    I really like the 3787, after a year the apple flavor really comes out. Plus there is loads of carbonation.
