Probably going to be a tough clone.
I would recommend trying to culture yeast from a bottle for an El Cedro clone. Jester King's wild yeast blend is a big part of their flavor profile. Never personally tried culturing from their bottles before though so dunno what the result would be. Might...
This is my favorite Tripel by far and I want to try to create something similar.

So I have been kegging for a few months now and I had my first big OOPS the other day. I put a keg on to force carb and they are usually perfect at right about 3 days on the gas. Unfortunately, I forgot about it and left it carbing for an extra day or so. It now tastes like beer...

I just switched from stock taps to some nice shiny new Perlicks. It really is amazing how much better pour/head you can get from them. I like to think it makes the beer taste better as well. :drunk:
