    I know we aren't making traditional sake here, we just have a fun, neat way of making rice wine. But it sounds like what you meant was that the Chinese use versions of mold which may include the stuff growing in my rice right now.... thats the "for dummies" version I got anyways

    Yeah, its clearly a high level of contamination. Unless star-san has stopped working, I am positive my equipment and myself are sanitary when handling the rice. I immediately transfer the cooked rice to the jars, close them, and allow the rice to cool there, I am thinking the easiest solution...
