I only brew 2.5 gallon BIAB batches. I have a five gallon pot and a 3. gallon fermenter and a 3 gallon carboy. Depending on the final yield i get between 20-24 bottles of beer out of a batch. I can't drink a lot beer either and like ability to brew different batches.

I did this as a 2.5 gallon batch a week ago and zested 2 lemons, it's finishing now at about
1.008 but testing the hydro sample I did not get much of a lemon taste. Maybe next time I will try the thin peel method.
I run my grain through the mill twice. It's DIY at the brewshop. Would suggest not being afraid to open the pot and stir. Also a longer mash time may help.
I stir it up every twenty minutes and usually mash for 70- 80.

4MM is a very small pipe, comparable to our 1/4 inch pipe. Most people here are using a larger diameter tube. Probably want 12-15mm tubing. 12 meter is ok but a little short.
