Do i need the protein rest?

I'm doing a Dixie blackened voodoo lager clone and it calls for a protein rest. I've never done one and don't really want to, just wanna know if it's absolutely necessary. The bill is as such, 16# 2 row, 5# 6 row, 1.5# chocolate and .75# C80. I understand that 6 row should get the protein rest...

Any ideas on my low efficiency?

It's a rather new thermometer so I haven't checked it and I can't be sure of the mill either. Oh yeah! there was about 1.5-2 gallons left in both the tun and keggle in order for me to get about 5.5 final. I'm thinking this may have a huge part of it.

So anyways I only got about 55% efficiency leaving me with 5.9% ABV and 79 IBU'S. Much higher IBU than what was expected. Ok, so...

    Fermentation inhibiting preservatives??

Thanks everyone, I just went with some concentrate that only has ascorbic acid and citric acid in maybe two of the flavors I used. Hope it all works out. I haven't been on here for a long time; not that I haven't been brewing, I just don't sit in front of a computer all day anymore. Anyways...

    Fermentation inhibiting preservatives??

Thanks for the quick replies. I'm using it in the initial fermentation so I definitely don't want potassium sorbate.

    Fermentation inhibiting preservatives??

Can anyone tell me what preservatives will inhibit fermentation? Gettin ready to make some cider and I wanna make sure that I don't get concentrate cans that will be no good.

    Ever Bless your Beer?
