+1 on high temps NOT causing "sweet taste". Sweet should come from unfermented wort sugar. High temps should cause rapid fermentation and gas flavors. You have to have a thermometer buy a $1 stick on and go from there.
You can only go by your hydrometer! To me a alcohol taste before bottling is a off flavor not a judge of percentage. What's your gravity now it should give you a idea of alcohol content because you can guess your OG based on starting extracts. I can't see 1% from a fully fermented beer!
Not to be mean but why would you attempt a lager without knowing what "lagering" is? I'm just now doing a lager on my 5th AG. Buy a cheap deep freezer asap!
I never taste my wort. The way I see it the yeast is at least 50% of the flavor so tasting it post boil isn't really telling much. Even my bottling taste is always different then the final beer. Just wait it out and do one taste there's nothing you can do now anyway!
