    Yeah I misunderstood your question. My suggestion would create bottle bombs. Why don't you want to wait until fermentation is complete before you bottle? Also what's your estimated abv?

    Stick-on thermometer. Does it measure beer temp, room temp, or combination?

    I've heard it should be within 1 or 2 degrees of the temperature inside the fermenter. But someone may tell you otherwise.

    You got it. Cover it with a towel or stick it somewhere that's always dark. The light will make it "skunky."

    Add dry American ale yeast when you prime/bottle. Or another yeast that won't affect the flavor.

    you're going to need more dark grains. I would do half a pound of the chocolate and half a pound of the midnight wheat. As far as working with chocolate, I don't have any experience so I would only be able to tell you what I've read elsewhere on the forum. 70% efficiency is also pretty high...

    To drink while brewing or not to drink.. That is the question

    I feel that a brew day is not complete without at least one while brewing. However I have enough panic moments during brewing while sober. I definitely don't need alcohol to help me out so I stick with 1-3 throughout the day.
