    My ginger beer. Never tried making that before. Store was out of whole ginger so I used 2 bottles (4 oz) of ground ginger, WOW this stuff is hot / spicy! A pound of brown sugar and some scavenged trappist ale yeast in a 1 gallon batch. Oh yeah juice of 1/2 lemon. I will do it again but will try...

    Bottled first batch, cleared up pretty good. A little tart, a little sweet from the priming sugar. I'll leave it alone as long as I can. That shouldn't be too hard, I have a 2-hearted IPA clone that I forgot all about, 2 weeks plus, turned out pretty good.

    Tried an Old Ale that's been in the bottles for 20 days, it said "pfffft" when I opened it but otherwise shows NO EVIDENCE of carbonation. Oh well, old ales should be flat I guess...

    Expired dry yeast - Kolsch

    Agree, I want some CO2 in there ASAP! A batch of wort is like a giant starter. No kegs (yet?) but considered getting a CO2 bottle for purging fermenters.
