Russian Imperial Stout: Beginners Tips and Tricks

I used two Wyeast smack packs and made a 2 liter starter with them. After two weeks the fermentation stalled so I pitched a 1 liter starter of WLP099 which helped lower the gravity. The vanilla beans were soaking in vodka for about two weeks before I pitched and it wasn't until recently that...

Russian Imperial Stout: Beginners Tips and Tricks

Ok, so a little background here... I've been brewing for almost three years now and am venturing into a RIS for the first time. This is a huge beer and want it to go right so I'm looking for any and all advice from veterans who've been there before. Right now the beer is tasting sweeter from the...

    Wyeast 1728 - Stuck Fermentation - HELP!

I recently brewed a Russian Imperial Stout with an OG of 1.100. When the wort cooled to 70 I pitched one smack pack that was made into a 1ltr starter and pitched a second smackpack by itself. Fermentation took off in about 18hrs and lasted 4 days at 62F. The yeast started dropping out quick...

    Finding Wyeast Pacman?

I waited about 3 weeks for BMW to get it in, but it looks like this yeast is just too in demand. Maybe re-using this yeast is a good idea once you get your hands on it.

I'm going on a road trip from Chicago to Tennessee and will be passing through Indianapolis, Louisville, Lexington, and Knoxville. Can anyone recommend a great brewpub?? Barley Wine - FG Too Low??

This was the first time I've made a Barley Wine and the first time using White Labs WLP099 Super Gravity yeast strain. My starting gravity when I brewed this was 1.084 and after 10 days of fermentation the FG was measured at 1.014. I transferred the beer to a secondary and aged for 5 months...

How do I keep fermentation temps down??

Styrofoam sheets? Wow, never even thought of that but definitely better solution than a cooler. Freezing two gallons of water now!! In your experiences, does this cause a cold spot in the carboy that affects quality or does the fermentation balance the temp out by the yeast activity? Either...

How do I keep fermentation temps down??

Thanks for all the ideas, but #1 is definitely not an option! Number 3 seems to be the lowest cost so that's going to be my first try. If that fails then the old fridge in my garage and a Temp Controller will be the next step. How often does ice need to be added to the garbage can? ...or maybe...

How do I keep fermentation temps down??

Anyone have an idea on how to keep fermentation temperatures down in the summer months? I live in Chicago and it's about 80 degrees outside so leaving the carboy in my garage is no longer an option. My house is air conditioned, but the basement only gets down to about 67-68 degrees. In my...

Two Brother's - Hop Juice Recipe

I agree that the hops do seem low, but it's difficult to argue when they provide the recipe. My plan is to use this info and enter it into a program, adjusting the hop levels and grain bill to get the desired ABV and IBU's that match their bottle.
