Rather new to brewing...For a 5 gallon batch would I just cut the ingredients in half (grains/hops/yeast/moss/coconut etc) and follow protocol for grains/water ratio? I really want to give this a go but only have a 10 gal kettle.

Amazing they've only been open a few months and already doubling (If I remember right) their production. Well, with beer like that I can see why. I've been watching NoDa closely on Facebook and they're probably one of the fastest expanding that I've seen in a while.

I recently made a stop at NoDa Brewing Co. in Charlotte while there for work and had their Ghost Hop - White IPA. I'll tell ya what, it was awesome! Ill be visiting them again next trip thats for sure. Didn't have one beer there with any off flavors! Check out their website, nodabrewing.com.

I have not had my hydrometer calibrated.
I did take the reading after I topped off so there's a good chance that caused the flub. Guess I wasn't thinking too clearly and was over excited.

My SG was 1.030. Took a reading earlier today and it was 1.00. Smelled great. Gave it a taste and it was on the bitter side and light in color.
I'll take another reading tomorrow and see if it changes any.
