    Sanitizing Hands?

    I use alcohol wipes for my hands. Just grab one and wipe my hands down before I handle anything that will contact the beer. You can buy them in bulk pretty cheaply at any med supply store.

    Lag time

    Fastest was about 4 hours when I made a large starter. Typical is about 8 hours before the airlock is banging away. Had one hangfire for 36 hours once then it just exploded to life.

    Bottle Sanitizing Question...

    Bleach will destroy SS in a fairly short time if left in contact. That is why you do not ever use bleach to clean SS. That said, I do not like it around my beer anyway, just too messy, corossive and slippery if you spill some on my tile floor.

    You could try the same thing we do for steel boats in saltwater, a barrier coat of epoxy. Be sure to use epoxy and not polyester resin which will absorb water.
