Beer to serve with flourless chocolate cake

I really enjoy bourbon, whisky, and scotch. Paired with a good chocolate and a cigar that is a good night. Something not suggested would be a smoked beer. Also Southern Tier's Mokah is a good chocolate, coffee stout. Maybe get a few bombers and have people test out different flavors? You...

Need help with a beer recipe for SWMBO

I think it looks good as a base to start with. I would say you are somewhere between a dunkel and a porter. The Pearl malt is a good choice, any of the english base malts will help add some breadiness to the flavor. You could also use some biscuit or Crystal/Cara malts to up the maltiness...

    Hop bursting VS. Continuous hopping

You can get plenty of IBUs in just 15 minutes, you just have to be prepared to use 2-3x the hops. Even with sub 8% aa hops, getting to 60 IBU is easy. That percieved bitterness is why I still add a small 60 minute hop. Hop bursting kind of rounds out the flavor. You could always up your...

    Hop bursting VS. Continuous hopping

It depends on the style, but if I hop burst it would be on IPA, Pale ales, etc. I have done continuous hopping on 2 recipes that I had done multiple times before and found it hard to find a big difference, so I typically just follow a traditional hop schedule. Is it really a smooher hop flavor...

    Russian Imperial Stout Hops

Just looking at it without knowing your grain bill or OG, I would say 6 oz of hops is a lot. You could get away with a lot less, maybe even do a 90 minute boil with half the hops. You are well over 100 IBUs with that, I like to try and be around 70 IBU. Also anything over 100 I dont really...

    Help with hop choice

Maybe???: 60 minute- 1 oz zythos 10 minute- 1 oz zythos FO- 1 oz simcoe I think warrior/bittering and columbus/flavor and aroma, or zythos/bittering and simcoe/flavor, or columbus and zythos together. Warrior is really your only 1 trick pony, it needs to be the bittering. The other 3 you...

How Much Honey is Too Much

This might be a bit much and really thin out the beer. Maybe 5-10% of the bill, plus you have the honey malt to, which will impart some flavor. Maybe just half a pound to 1/3 lb?

    thrown together ipa?

I think it will work well. With the maltiness from the Munich and somewhere around 50 IBUS it will be pretty balanced and full flavored, not just a big bitter hop bomb. If I changed anything it would be to just add the cascade at FO with the orange peel, get a little more flavor/aroma out of...

    Kolsch Yeast

I have had good results with the Wyeast on 3 separate occasions. It really needs a cold crash though, mine did not flocc well. I personally dont care that much so it didnt bother me.

How to test and modify water

I actually contacted my water company by email, and in 2 days I had a 5 page pdf with everything I needed. I agree the online info has very little application to brewing, it is more about health concerns and cleanliness. Try finding a number or email to someone in quality control or their lab.

    Looking for a CHILLER

Agree with freisette, if you have enough tubing make sure you bend the copper tubing over and down so it goes past and below the lip of your pot. You dont want 1 drop of water from inside the chiller to make you paranoid for a week, or worse yet actually ruin a batch.

extreme beer challenge : (low alcohol)

My two citrusy hops are Cascade and Citra. Try dry hopping with those. The way I see it you have two options, brew something low in abv or take the alcohol out. Now I like good 3% session beers, but I am just throwing stuff out there for seriously low abv. I think starting with a good...

    Looking for a CHILLER

dsaavedra +2. Make your own. It doesnt take a ton of time and is fairly easy. Just make sure you wrap around something so you dont get a kink, a paint can gas or air tank, etc. I would also pick up an garden hose to kitchen faucet adapter if you brew inside. I went a bit overboard and...

    Wort Not Fermenting

Unless you left out a whole bunch of extract, then your starting gravity was higher than that. The kit says it is 7.1% so you have come down probably a good 30 points. You are fine, let it sit longer. Some suggestions for next brew: -Take starting gravity - Are you getting a Krausen...
