Help - Beer from 2011 in primary - how to bottle

So in April 2011, I started a smoked wheat beer. For reasons that are not important here, my life became complicated. The beer has sat in my basement since this time. I'm going to bottle it just to see what I have. It very well will be garbage water, but, science. Should I just bottle it as...

Article on yeast and high acidity sours

http://phys.org/news/2016-03-biochemist-solution-acid-craft-brewers.html Came across this today. Since a lot of people are attempting sours, though they might find it interesting. Terminal acid shock occurs when craft brewers add extra yeast to beers after fermentation to create...

Is there such a thing as too long a diacetyl rest?

Yup bottled it. It tastes good, no off flavors. It's taking an extremely long time to carb. I don't know if I'll get proper carbonation on it. I just primed and bottled without adding any extra yeast. It's amazingly clear though.

    Bicycle bottle opener

I think they're selling those things for $20-30 a piece. Ridiculous for a seat clamp and not worth the silly novelty. Never mind that you have to open your beer on its side. A commenter on a another forum noted something to the effect of funny how they can carry a six pack in the back of...

    Giving homebrew to a bar?

Since you're from Cali: http://www.homebrewersassociation.org/pages/government-affairs/statutes/california Selling in CA? Clearly no. Giving away at a bar in CA? Also no since that's not for personal use, competition, or "homemaker's tasting". Take a bottle to your LHBS. They'll crack it open...

    Is homebrewing that creative?

Did you build the car to look like the picture on the box? Did that make you happy? Was building the car to look like the picture on the box your goal? Or did you give the car a custom paint job with racing stripes and chrome paint? Did you chop the roof or make a low rider? Just because you...

    Airlock

This. To look at the cross contamination risk, I either introduce a turkey baster to my brew or a hydrometer. I prefer to put the hydrometer directly in my buckets versus taking a sample. The risk of introducing oxygen is very low. But if I have to take a reading from a carboy, I grab a sample...

    Any money in balanced beers?

Well, I don't get out much anymore - work, family, etc. So when I do get a night out, I want to try something new, something I've never heard of. But when we have a party or family get together, I usually get a few 12 packs of standard beers that everyone will enjoy and maybe a 6'er or two of...

Favorite Regional Soda / Pop / Soda Pop

Detroit/Michigan used to have Towne Club which was phenomenal. Faygo is still great - Red Pop owns. And Vernors is a classic. I took it for granted until I moved out of state for a few years and it was hard to come by.

Is this set of equipment going to work?

One of my primaries has a spigot. I close the spigot and turn the valve sideways. Have never had an issue. Just make sure you clean it out really well afterward. Trub likes to hide out in there.

    Help with smoked malts!

Does your apartment have a balcony or patio? Do you have a grill? I just cold smoked some wheat and it came out pretty good (good as far as I can tell, it's sitting in primary right now). The question becomes, how much smoke?

My friend made a video of my brewing. It looks sweet.

I think it turned out great. I don't know if you could ask for better natural lighting indoors. Excellent choice on the Postal Service instrumental.

My friend made a video of my brewing. It looks sweet.

Do you know what kind of camera he used to film that?

Has anyone ever smoked extract or does anyone sell it?

My extracts typically drop to 1.01 or 1.008. I take beer calculus with a grain of salt. But I went ahead and tried it. I adjusted the kludge smoker (which I later moved between the pans). I used two cans that could telescope inside each other so I could put in more wood chips, but allowed...

Has anyone ever smoked extract or does anyone sell it?

Went to the LHBS after work and ran it by a few people there. Funny thing, the yeast was discussed as well. This will be the attempt: Oak smoke 2# wheat malt (and since it's cold smoke, I'll cold smoke some cheese on the grill at the same time!) OG: 1.049 (that's 60% efficiency, I'd like to...
