    Cinammon in your beer?

    I have it in my current beer - its in secondary. I only went to one stick for 5 gal.... put it in during grain boil. when racking to secondary - it was a good melow taste

    Spice Wheat?

    looking to make some sort of spiced (think mulling) beer for late harvest/fall time. Anyone encounter a similar venture? I was thinking of buying a wheat kit and adding the mulling spices to it. Thoughts?

    Glass carboy for primary fermenting?

    Did you pour from pot to carboy? or Pot to Pale to pitch then carboy? Hopefully you used the second method questioned. If not - next time pour to pale, cool wort, pitch yeast, areate and then auto sipon to carboy.

    Waiting...

    asking for permission is worse than asking for forgiveness. (take it from me - female :) ) In my case - i have to find a husband brainwashing kit to let me gut the kitchen to make room for a ferment cabinet and gas stove :) :rockin:

    ESB ferment time seems low - what do you think?

    Brewing based off the Red Hook ESB recipe from my hb store's recipe books - and ferement time for primary says 4-5 days. This seems pretty short - do i go by this as a "bendable guideline" and wait for fermentation to complete then rack to secondary? suggestions?
