I'm starting a contract brewery and I would like to get some opinions if you don't mind.
The brewery is called Eternal Student Brewery and I will be making a pomegranate wheat and an ASB ;) to start out with.

It gets a little warm if you let it go at full speed for a long time. I was letting it go for 2 hours on and 1 hour off at 8 (speed out of 10). Over night I put it on 5 and let it go to town

just my two cents. cuts the melanoiden malt completely, use pilsner as the base instead of munich (12# pilsner), still use munich (3#). Maybe cut the caramunich to 3/4#.
Let the pilsner malt shine! Mash high, I like 154, maybe try to push 156 if you can. If you can step mash I would do 145 for...

Oh yeah. You can hear the magnet spin and if you take the top off and look inside you can see a nice whirlpool going on. The speed does have to be up around 7-10 to get it going nice and strong, but still effective. Much quieter than when I make starters in an erlenmeyer.
I needed to make a BIG starter but the biggest container I had was only 2000mL... So I used a corny w/ sterile air in (maybe but not completely)

If you are already carbonated and you are getting a reading of 1.022, you may be higher than that actually due to any CO2 contamination.
Even with more info, it looks like you got yourself a session beer ;)
I can get it down to 1.012. Thats actually my target FG. Like I said, I make a big starter and give them plenty of oxygen. I use a yeast nutrient both in my starter and about 15 min to flame out. I normally get around 85% attenuation (dont quote me on apparent or actual).
