    The other thing I'm thinking is that it's gotten wicked hot in my basement (80 degrees! In New England!) and that the heat may have aroused some otherwise-dormant yeast. US-05, BTW. I don't know if this is actually possible; just a guess. Unfortunately I don't have a cooler place to store it...

    dry hopping with a high alpha%

    I just opened my latest batch of IPA, which I DH'd with Chinook, and it is indeed piney. I used 1 oz of pellets in a 5 gallon batch for about 2 weeks, and the hop aroma is fairly subtle (by IPA standards, anyway). You may get more or less pine depending on what hops you add at the end of the boil.

    You could keep that Better Bottle and use it as a primary. I started out using a bucket for primary and a 5-gallon carboy for secondary. Now I use them both for primary. Usually at the same time!

    Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

    Has anybody tried this recipe with all Centennial? I misread the recipe and used Centennial instead of Cascade for the third and fourth additions. I imagine it'll still be pretty good, maybe just a tad more bitter, which is fine by me -- guess I'll know in a few weeks! :mug:
