UPDATE: I brewed the Extract version of this beer almost a year ago. It took nearly 3 months to bottle carb (almost paniced). My ABV came in at 9.xx%. I have been extremely pleased with it. Definitely one that I will consider doing again.

I just ordered this IPA extract kit from Midwest Supplies along with a yeast starter kit as well. Can't wait till it all comes in. This will be my first yeast starter brew and first 2 stage fermentation with some dry hoping. Not real sure how much starter I need to mix it up? Any tips for a 5...
Mines been nearly a year in the bottle. It has mellowed, still a bit much spice for my liking. Just not a fan of those one personally. Others have said they like it. I give it to them.
I am on my 4th BB kit. All have turned out great. I've done the Summer Ale, Pumpkin Spice, IPA, English Brown in the fermenter now. Not sure what's next. Maybe the red ale? Tried a buddies that was good.
I always try one at a week. Mine have all been pretty carbed at the 1 week mark. It's your beer do as you please. The more you drink now the less you have down the road. Another good reason to make more now.
As far as water with all the BB kits that I have done, my boil has been 2.5 gal then cool the wort then top off to 5 gal with spring water. I have hit OG and FG every time.
Did you by chance do the Brewers Best kit? If so, the spices are strong and mellow with time. I have only tried one at one week of bottle conditioning to see if it was carbing, it was. I decided that I would let just sit for about another month before trying it again. I did a search after I...

I would say yes you can leave it and add the wood chips. You should steam (sanitize) the wood chips before adding though. I think that I have read about that on here. Good Luck!
