Is dms really that big of an issue considering there is no pilsner malt? I mean brulosophy did their experiment and saw no flavor difference with best malz pilsner malt boiled for only 30 minutes.

Ibus won't be a problem. I haven't bought the hops yet so once I find out the alpha acid content I can play around more and add bittering hops if need be.

Why not start with a brew in a bag type set up? Or maybe you can do some sort of setup where you recirculate mash between the kettle and cooler and then boil in kettle. That you initial start up cost would be the electric panel, a pump, and the element install on the kettle.

Only need to buy some cam locks and tubing, blichmann riptide pump, and a biag bag before I am fully ready to go. Also probably need to look at a RO system so if anyone has any suggestions for one that won't break the bank I would love to hear it.
