to clarify - do i understand correctly that you are mashing in a bag in a MLT that has a false bottom ?
i was preparing to move toward this exact type of system, but to date have not been able to find any other mention of using both.

I added cacao nibs (Ghana) to a NB Bavarian Hefeweizen - tested great after one week and as of tomorrow, it'll be two weeks in secondary. 1 and a 1/2 ounces nibs direct to the secondary with one gallon of the Hefe. I bottled the other 4 gallons without the treatment.

i'm assuming that the protocol would be to add the cold press concentrate, correct ? not diluted cold press coffee.

not sure I'll have time to bottle on super bowl Sunday - will it be an issue to wait as much as another week before I bottle ?

it's been in bottles about 2 weeks - tested 2 bottles - no carbonation whatsoever.
the bottles have been in a cold garage though - mistake ? I'm guessing so.
moved the bottles inside. should I expect the carbonation...
