Yooper is of course correct about the source of the issue.
I have had good luck in the past by aerating the hell out of it with a wire whisk made of copper, then rebottling.

Make a 5gallon batch of Skeeterpee (skeeterpee.com) but leave out the last half-bottle of lemon juice. I use Lalvin EC-1118, works every time! When it is done, backsweeten with whichever of these flavors the women-folk like: http://lowellshop.com/syrups.aspx

definitely go with just the mulberrry juice. the skins and stems make an off-flavor, sort of bitter and oxidized.
freeze, thaw, mash, and strain. or use a steam juice extractor if you have one.

JAOM start to finish...about 80 days. racked it, let it sit another 30 days, stabilized, bottled.
each week you let it sit, it tastes even better.
only 1 bottle left. gotta make more, this stuff is awesome.
