I have 5 gallon of fresh pressed apple cider and its starting its own fermentation before I even got sugar added. Should I add my sugar and let the wild yeast continue on or should I pitch some Cotes?

We have 12 gallon of cranberry wine on right now. Og 1.112, fg 1.050. Thats basically 8.3% & super sweet. I cannot remember the yeast but next step down from Cotes. I made with Cotes before & it finished at 1.030 so this was supposed to be drier. I think a temperature drop may have caused...
I harvested my first batch of cascade the other day. I got 3/4 lb off one rhizome & I think some hung too long & got too dry. We just had torrential rains & flooding so harvesting was out of the question at that time. Should I keep them or are they too dry? Smell great though....
