I'm thinking of switching to biab method to save time and space. I have a 15 gallon pot and want to do 10 gallon batches. No more than a 20lb grain weight. What problems will i have doing this. I do it all the time with a 10 gallon cooler-sparge method. thanks

I set 2 kegs at 10 psi with one pale ale and one wheat beer for 3 weeks. They tasted delicious and were carbed nicely. Did not touch, change or drink them for 7 days. Poured many of beer and they are now foamy as hell and have a stronger alcohol taste. Any ideas of what went wrong, Thanks.
