Possible to tweak a beer after fermentation?

Example: After you have brewed and fermented and let it sit in carboy for 2 to 3 weeks and say the bitterness is not as high as you want it to be. Can you boil some hops(i.e. 1/2 oz in 1 gallon of water for and hour), let cool and add small amounts to carboy until desired taste is accomplished...

    long term keg carbing question

I set 2 kegs at 10 psi with one pale ale and one wheat beer for 3 weeks. They tasted delicious and were carbed nicely. Did not touch, change or drink them for 7 days. Poured many of beer and they are now foamy as hell and have a stronger alcohol taste. Any ideas of what went wrong, Thanks.

    10 Gallon Mash Tun Capacity?

I've been brewing 10 gallon batches but always lower gravity beers. Usually 14 to 18 pounds of grain per batch with 1.25 quarts of water per lb. Has anyone maxed out the limit of a 10 gallon mash tun useing 1.25 gallons per pound of grain? Just wondering how big of a beer you can make with out...

    Do I need a starter?

I was planning on brewing a beer tonight but I forgot to make my starter yesterday. I'm making NB extra pale ale (0.045). I have washed us-05 yeast, about 1/2 inch in an a pint jar that is 3 weeks old. I made a starter a couple weeks back for a Irish red ale and it was fine. Should I delay my...

Irish Red Ale: Brew to glass in 18 days?

The original gravity was 1.040, Final gravity was 1.005 after 14 days. I used washed Safle-05 and made a starter for it. Fermented @ 68 degrees. It tasted good when I kegged it, little malty but I think that is the style of the beer( my first ever red ale). I kegged it yesterday w/ 30 lbs psi...
