I haven't entered any comps yet. But, this might be my first. I have an APA, Stout and CDA ready. though, I'm not sure the stout and CDA would fit into a particular category.
I have a 7.5gal turkey fryer with a strainer basket that I use a 5gal paint strainer bag in, and 13.5lbs of grain is about my max in the strainer basket. When I have a bigger grainbill, I will split the mash between the kettle and another cooler or another kettle with another paint strainer...

I was at the recording of Reckless Kelly was here. One of the best concerts I ever saw. CCR was good too, and still a fan of The Departed. My fav Texas Country band is still Randy Rogers Band. Lots of good Red Dirt music out there....
I would forgo the peppers in the boil, and only add to secondary (or primary after fermentation has stopped). Before adding to the peppers, give them a quick boil and then freeze them. freezing will break the cell membranes.
I've never tried a hoppy chili beer, all of mine have been light on...
Man, I really want to contribute to this thread, but I know my wife will find the thread when internet stalking me. :)
