    2009 Dechutes Jubelale

Just a warning note for anyone trying to use the Ringwood Ale yeast... it threw out tons of diacetyl in my Jubelale Clone - suuuuuper buttery.

    2009 Dechutes Jubelale

Just tasted my Jubelale clone yesterday and it's pretty delicious! I did dry hop, a quarter oz each of Tett and Goldings (3 gallon batch). The yeast character is strong with this one, heavy notes of dried fruit and a bit of warming spices. Next time, I'll up the hop additions (especially the...

Anyone brew somewhere between 1 and 5 gallons?

I most often brew 3-gallon batches. I do brew in a bag, and it seems to work out pretty well (I have a pretty small kettle, too - it's only 5 gallon capacity). I like this system for two reasons: I end up brewing more often because I run out of beer pretty quickly, so I'm learning and...

    Cranberry Wit, dry cranberry addition?

I brewed a simple wit last week with some cranberries (added at the end of the boil). It reached high krausen pretty quickly (it's a low abv beer anyways) and is waiting in the carboy for me to either bottle it or do something else. I kind of want it to be more pink and have more cranberry...

Do you dry hop in the primary or the secondary?

I dry hop in primary after fermentation is complete. I rarely do secondary for anything that's dry hopped anyways. In fact, I rarely rack to secondary at all. Maybe it's laziness, but I haven't noticed a problem yet.

    2009 Dechutes Jubelale

I just brewed my last week, so I'll let you know how it comes out! @dcbw what sort of bad experiences did you have with the ringwood yeast? I just tasted it after about a week in the primary and it's pretty tasty - fruity notes from the yeast. I haven't dry-hopped yet, still haven't decided...

Anybody ever used rum with their recipe?

I just brewed a jubelale clone and plan on adding some rum, vanilla beans, and nutmeg at bottling. Kind of an eggnog theme. I'll let you know how it turns out!

    New Brewer's Stupid Question

You'll be fine, I wouldn't even swirl the carboy. The yeast will do their job, they just missed their first snack.

    2009 Dechutes Jubelale

I used this thread to formulate my jubelale clone recipe this year. I'm a little worried about getting too crazy with the IBUs, though.... shooting for about 50 sound right? Also, how much should I dry hop? A half oz of each Goldings and Tettnang? Lastly, I'm thinking of adding a tincture...

    Female Home brewer's Club

I'm here! Been homebrewing for a few years. I can be a little shy (especially online) so I kind of just lurk on here. My homebrew club has a few women members, in fact - one of ours just won homebrewer of the year last year from the AHA. Nice to meet you.

Bacon Porter why not Beef Jerky??

This might be good if the flavor profile of the base beer is subtle enough. Try doing a beef stand, heh.

    Adding honey to secondary

Would you suggest diluting the honey to the beer's gravity before adding it, or just dumping it in? I'm afraid it won't mix in if I just dump it in there!

    Adding honey to secondary

I brewed a big, hoppy, red ale last week and am thinking of adding some honey and fresh ginger to the secondary. It's actually pretty close to the target FG, after being in the primary for a week, so I was wondering two things. 1. I've got some delicious raw fireweed honey, so obviously I...
