    I've never had the Mercy Grand Cru but i have had other beers of Ale Asylum and was impressed. I am thinking that its more of sour ale (flanders red) perhaps from the name. Maybe check out Rodenbach Grand Cru or a Flanders red

    I don't have experience with any jet fired burner and my setup is keggle with an electric element. I do find a large stratification of temperature between above and below the element. But the temp is relatively constant above the element. You should not experience this with the heat source on...

    If you are using 120V you I think you should be able to find a light dimmer switch that is rated for 20A.
