    Gelatin in primary?

I just did for a Pumpkin beer three days ago at about 55 degrees and it worked great. It's nice and clear now and in the keg caring up.

Help - too much sugar in the keg

It will be fine. The yeast will chew it up... It may take a little longer than usual and generate more CO2. But I doubt you'll have sweet slobber. :D

BIAB Day : New Grain Mill and Wort Clarity

Nice... what kind of beer? I also use the bag in a bucket to drain... It's a great enhancement.

Post-apocalyptic brewing (no CO2, no bottle caps)

For serving and storage I would be thinking along the lines of cask ale with a beer engine to pull a pint or two.

    jamil's chocolate hazelnut porter

I did it a few years back... very nice brew that lots of rave reviews. Fermented for 29 days before bottling. First bottle at 6 weeks and there may be a bottle or two left. Have fun with it.

    brew belts

I've seen about a 10-12 degree F with the brew belt... so you may want to look at other options.

Is this insane, or should I go for it?

I voted for go for it but you are still off your rocker :) At that OG is that enough yeast or would you need to make a starter or small mead to build enough yeast to make a run at all that honey?
