How many gallons of cider in 2017

875+5=880 Just started another 5 gallons with a medium floc yeast...stupid first batch was low floc and isn't clarifying :(

Cider has been in the keg for 2 years.

I can't imagine anything being wrong with it. How was the original recipe? Did you add a lot of acid blend? Maybe you just need to mix in a little more sugar in the keg or mix it with sprite in the glass?

Hazy Cider - need help clarifying in keg

Hi, I have 5 gallons of cherry cider that naturally carbonated in a korny keg with RedStar Premier Cuvee (low floc yeast :( ). The taste of the cider is impeccable...perhaps the best I've done to date. It's slightly sweet, not too sour, and of course is sparkling. I've had it chilled in...

    Hard Lemonade

Update: I did the natural carb w/ sugar. It's now semi-sweet, sparkly, and clear. No off flavors. :tank:

    Hard Lemonade

I went with the bucket-swap method. I sterilized my bucket and autosiphon, spritzed some co2 into the bucket with a couple of crushed campden tablets, and covered it with the hose in there from the autosiphon. Siphoned off the lemon-wine, and then I cleaned out the carboy. Spritzed some co2 into...

    Hard Lemonade

Well, it's sparkling mead...so maybe it'll go a little faster. But I'd be looking at ~3 months minimum to empty the keg. I could bottle once it gets down to 1/4th full. I don't have another carboy. I was thinking of racking into the bucket and leaving it there or racking into the bucket...

    Hard Lemonade

My keg is full of mead, and I've got 5 gallons of this hard lemonade that's now clear in my carboy on the yeast cake. Since I can't carb it in the keg, is it okay to leave it on the lees? Or should I rack it into a bucket and let it sit until the keg is avaliable?

What sweetener do YOU use for back sweetening?

My favorite sweeteners for cider are: frozen apple juice concentrate and table sugar. The concentrate give a little more flavor and sweetness and the sugar is cheap! Of course, you'll want to stabilize it to prevent any further fermentation.

First Time Brewer - Which method ?

This is what I did the first few batches of cider I made. It was great. If you stop it while it's in full swing and drop the yeast out, you can still have some carbonation and sweetness left over.
