    Sounds like you've only had the beer kegged for about a week or so? I usually set my guage to about 18-24 psi for about a week and then drop it down to 10-14 and it takes 2-3 weeks on average for the beer to hit the right carbonation.

    How can I wait before washing yeast?

    Be sure to do it relatively quickly, though. I ended up letting my yeast sit with about a half gallon of beer on top of it for a week+ and when I came back to harvest the yeast I noticed extra stuff on the top. Felt like an infection so I dumped that yeast.
