I know I'm late, but I leave out the lactose in my ginger beer. It changes the mouthfeel, to something I don't need in a GB. I do back sweeten with Splenda though. I also dry hop with fresh ginger ( sliced paper thin on my mandoline) and crystallized ginger( more concentrated Ginger flavour)...

Research everything. These forums are like an encyclopedia. I was in your shoes earlier this year, and found these to be a great resource. I've since had a couple of successful brews, thanks to the knowledge passed on here. Also, don't be cheap when it comes to equipment.🍻✌️🇨🇦

Hey all, i had to raise the temp in my coolroom a few degrees the other day. Apparently the thermostat on the heater I used doesn't work, so in about 6 hours the room/my beer (day 7), had reached 92 degrees. I fast chilled back down to 69 degrees, but was there any point? Is this batch destined...
