    Well, the beer tasted pretty weird. Definitely got a nice lacto culture, but without a boil, and thus, hops, it's pretty freaky tasting. My brew partners SWMBO liked it tho, so onwards with conditioning. I'm guessing that if I'd have boiled it to stop the lacto and pitched brett, it'd be a solid...

    5 Day Sweet Country Cider

    Did a gallon of this to try it out. Cold crashed, racked to bottles, straight to the fridge (I like it still). No bottle bombs. Just tasty semi sweet session cider. Will do again!

    So what exactly is your glassware of choice?

    I usually roll with a wide tulip or snifter, but I'm growing a rather large collection of all shapes and sizes. I usually grab at least one new one a week at work (wine/beer shop)! Draak tulip tonight lol.

    Does it amaze you at how many breweries are terrible at making beer?

    Love the porter. The bombers they release (brewers series or something like that) are usually awesome. Our sales rep told me that it's basically the "let the brewer make 15bbl of whatever he feels like this month" beer. Most recently a smoked black lager, which was really quite good!

    As someone who grew up with The Tap/Haverhill Brewing in my back yard, I've noticed something else on these lines. The tap brews great beer. There's always something crazy or new or fun on tap. BUT, they bottle the most consumer friendly beers, few of which I, or most other beer people I know...

    Unfortunately, I just got home. Was posting from a bus before. It's all fermenting violently (the wee heavy is blowing off so much gas, the blowoff bucket looks like its boiling!) I was thinking it may be a nice oud bruin. May blend in a little brown just to balance it out

    Awesome! I wasn't sure if any harmful pathogens would grow in unboiled beer. I know they don't in boiled wort... Also, naturally, not boiling means no hopping. I'm gonna do a little extract brown to blend into, so we'll see!

    So, my friend and I brewed a big wee heavy yesterday, and ended up with a few gallons of liquid left in the mash tun. So, I decided to let it sour, which it did, and see what it came out as.
