    Thanks! I hadn't heard of that one before.....I had heard of San Diego Super (WLP090) being supposedly the same as WY1764. DO you know whether IYA18 is really the same strain as Pac-Man (WY1764)? Or is it just very similar in performance?

    I would go with maybe 2/3 or 3/4 the ginger. Went with 1/2 last Christmas, and it wasn't as good.

    Sounds like you don't have a coil chiller - but do you have any other way of getting the ale wort down to pitching temp (like an ice bath outside the carboy)? Seems like that would be easier than pulling the hef out of your fermenting chamber...

    Sounds to me like it will be fine. Had this happen a couple of times, even after what I though was vigorous shaking of the unopened yeast packet. I would proceed using your normal steps - if for some reason the fermentation doesn't take off, then I would go to a backup plan. Good luck!
