ok. thanks. i found a few varieties of organic malted barly on the northern brewer site but only a few organic hop options. i guess i could just grow all my own hops. i'm surpised at the limmited availability.
for a variety of reasons i would like to use organic ingredients in my brew. i have not found many sources. does anyone have a source the'd like to recomend?

i started my first batch of mead back in november. i racked it into the secondary around the first of the year. i'm starting to think about bottling it. i would like it to be carbonated. i think 2 atmospheres is what i'm after. roughly that of a beer, as i'm using 22oz beer bottles not...
it did not get much exposure to sunlight. i have a towel covering the carboy. i did use some polecat's ass extract in my last batch. so maybe there's some residual.
all and all i'm not too worried about the stink. i was just curious about potencial causes for my yeast's farts to smell so skunky.
yes, that's true. i had some extra crystal malt that i forgot to add to the last batch so i used it in this one. as for the hops, i thought it might help to ballance the extra malt. a tasty experiment. i hope.
