@2 months you should be fine. I've never noticed any foam or a traditional active fermentation when adding a secondary yeast besides a pelicle of some sort
My simple gelatin process is:
-Pint of room temp water
-add gelatin
-heat to 140 or so (remember it will continue to warm in the pot, don't go over 155ish)
-dump into cold finished (un carb'ed) beer
-prime as normal
The only thing it doesn't like it being moved after the yeast trub settles...

Well it looks like I had 3 go to the mini-BOS in San Diego and one advance with a Second place awarded. If they filled the sheets out correctly, which San Diego has been very good about traditionally.
The 2 bottles might start making the competition have more cases like you describe. With homebrewed bottles all varying in consistency to some extent. It would be really frustrating would be to score a 40+ and advance to the mini BOS and have a bad bottle. That could explain the reverse of...
