Lots of diacetyl ? I dont think this style should have any buttery taste according to style guidelines. Is the slow ferment going to lend more diacetyl ? Can I break and rest to let the yeast re-absorb diacetyl before carbination?
Finally got airlock movement after 8+ days. The yeast was "after" its best-by date, don't know if that was the issue or not, maybe it was dormant. Its movin' now, a lot of sulphur aromas coming from the carboy.
Thanks YooperBrew, lots of great info, especially regarding the "starter". I obviously was wrong about the yeast and should have grabbed a 2nd vial or done a proper starter for this lager. If this thing doesn't move by Wed., should I pitch another vial of liquid yeast, or do a starter to...
I asked the guy at the Homebrew shop if I should grab an extra vial of lager yeast for this batch due to previous slow fermentation, he assured me that one vial would be enough. I did put this yeast into a pint of water first, aerated, and then put into the cooled wort. It sounds like that is...
I brewed a Vienna Lager recipe on Thurs night 12/10. After wort cooled enough to take a gravity measurement, I was at 1.058 with a 4 gallon quantity. I wanted to maximize keg space (5 gal) but wanted to keep gravity at least 1.052. I added 16oz amber malt extract and 1 gal filtered water after...
I want to brew two lagers for a wedding on Jan 16, 2010. Its Mexican food and would like to brew a light and a dark lager for the celebration. I think my window is closing for a true lager and may have to go with a hybrid of some type. Not experienced enough yet for AG, put partial...
Its been two weeks and the primary is still burping about once every 10 seconds. The gravity is still dropping, measured 1.006 on 10/03. I think I will rack to secondary on Sunday 10/04 and add the juice with the primer. This brew going to Raiders vs. Jets. I found out how to open up a Sierra...
Up and brewing this recipe right now in CA. Going to take it up to NorCal for Raiders vs. Jets in Oct. Hope all goes well. How does that saying go ? Plagerizing is flattery. Or just not good enough to formulate original recipes just yet.
So, I set up my kegorator with a sanke fitting and a CO2 shutoff valve to dispense "factory" beer. I would like to re-fill and pressurize the Sanke 5-gallon cylinders with my own beer.
That's cool too. I wanted to re-fill these 5-gal cylinders with my brews, not convert corny kegs to sanke bungs. Then how would I pressurize them for pouring ? I dunno.
Anyone try to keg into a 5 gallon cylinder (Sierra Nevada) ? I think it has a Sanke type bung on top. They just look so cool, better than a corny keg and I have access to a few if I can make it work. I also sanded the one corny keg I bought, it looks great. Am working on a Guinness 1/2...
On June 2nd, I popped the first bottle that had pop. Maybe it was the bottle conditioning at too low of a temp or that small pinch of dry lager yeast I added to the bottles. But I am stoked either way to have even a little head.
