Yeah I've also had really good results with S-189. I wouldn't hesitate to use it at all if liquid yeast is out of the question. Here's a link to a beer I brewed with it and a review.

lagering & cold conditioning are too different things. To lager you slowly lower the temp so the yeast stay active. Lagering is usually done -10 degrees below ferm temp. since most lagers are fermented around 50, I don't really see the issue here.

If you really want to lager it then lower the temp slowly (1 to 2 degrees a day). This will ensure the yeast don't shut down & continue to clean up the beer as it cools down.
If you drop the temp all at once (i.e. cold crashing) then the yeast will shut down.
I usually don't bother to lager...
Yeah I'm just going to go with two 120v heatsticks on separate circuits since I'm obviously in over my head haha. Electricity freaks me out.

Can anyone help me ID this outlet? I'm looking for a heatstick for my HLT that can heat up 12 gallons to 170 in a reasonable time.
From the google it looks like a nema 6-20 outlet but I don't have any electrical knowledge so I'm not sure.

My girlfriend is from Erie and I've had the railbender. I agree it's a fantastic beer.
I've only been to the brewerie for a beer fest but it was honestly the best beer fest I've ever been too. We actually got to sample all the beers and the lines weren't long at all.
