    It really depends on the type of yeast. Using WLP001, Nottingham, and EC1118 I get it down to 1.000 to .998, so very little, but those I only target 8-10% ABV. I just did a batch with turbo yeast, was targeting 16% and got closer to 20%, FG .995. The 8-12% had a bit of a chardonnay flavor to it...

    I make some hard punches every year for Hallowing using a 12-15% sugar wash. I just calculate what ABV I want, get some juice concentrates, and replace appropriate amount of water with the wash.     Slow trickling Perlick:(

    Ah, funny. I just started using a carbonation stone for soda water. It was trickling out even at 25psi, then I realized, it was still fizzing at the stone. I think it lets the co2 out so slowly that it doesnt have time to build pressure back up right away.
