    Insane Barleywine/ Utopia clone.

I found a secret ingredient, reading about high gravity yeasts I learned two things. One our brothers that distill after they have fermented don't care for them. The second thing I learned was that they can use liquid enzymes to convert corn with out malting it, or using malted barley. I've...

    Insane Barleywine/ Utopia clone.

My fall back is to mash all the grain in a 120 quart cooler over night and use my mash tun to pull the wort. If I do that I will separate the first, second and third runnings and blend to get my numbers and look at doing a parti-gyle with the third runnings and left over seconds. I figure if...

    Insane Barleywine/ Utopia clone.

Change of plans, not going to brew a "starter" beer. I've decided to treat this like a normal large beer only more so. I will create one liter starter with the WL099 and then step that to a two litter, then step that in to 2 two liter starters. I have a stir plate and am pretty sure I can...

Using 2 year old hops. Adjust the amount?

Time to brew a sour, I had to wait for two years mine to age.

When to move sours to triciary and off of the fruit?

I was planning on 9 to 10 month total bulk aging, with at least 6 months in the bottle. The plan is to have it drinkable for summer of 2018. I've been drinking my beers for the last year with very little brewing, so the plan was to build up to 4 beers with a 12+ time span, brew a couple of...

    Imperial Stout Recipe

I would look at using expresso power to get the coffee flavor, used it in a Coffee Chocolate Stout and it was great.

    Insane Barleywine/ Utopia clone.

I have brewed 4 beers with SGs of over 1.120, three RIS and a Barleywine that is sitting in secondary. Now I'm thinking I want to brew a true monster. I've read the threads here and a couple of other sites and a few of the comments festered in to a plan. Based on Way, way, way over the top Sam...

    First sour, need advice

I once let a carboy of RIS sit for 6 months dry, after tending it for 18 months. Figured what the heck, added sugar, yeast and bottled. 2 years later it was the best beer I ever bottled.

When to move sours to triciary and off of the fruit?

I brewed about 11.5 gallons of a wheat beer and after 4 days poured in the dregs of a couple of sours I had cultured for a little over a week. I let that sit another couple of weeks, then pours 2 cans of raspberry puree in to a 6 gallon carboy and 1 can of peach and one can of apricot puree in...

    Cascade Beer Candi Company

So I've bought their products for Morebeer before and really liked them but figured out that if I bought a years supply I would be cheaper to just buy direct. They shipped out Monday for a Thursday delivery, Thursday no package and a weird status on the USPS site. Expected Delivery Day...

    PB2 in secondary

I've made Chocolate covered beaver nuts and added PB2 and Coco power straight from a freshly opened container with no issues.

OFFICIAL Kate the Great Russian Imperial Stout Clone

In my first batch I used about 3oz. medium toast American cubes soaked in port for 6 weeks and added that to the tertiary for about 6 months, bottled it after bulk aging and let sit for 6 months before I drank the first one. The oak was about right, now two years later the oak has mellowed out...

OFFICIAL Kate the Great Russian Imperial Stout Clone

Will I never learn? I brewed a 6 gallon batch Sunday a planned, I hit my numbers at 68% based on boiling 9 gallons down to just over 6 gallons and adding 3 pounds of DME to get me to 1.10. The first hot break took about 5 to 7 minutes with 9 gallons of wort in a 10 gallon pot and me using the...
