Well, all of my water comes from the backyard hose so I don't think it will hurt it to come from the fridge ice maker. We have pretty good water in our neighborhood. I wasn't sure if there was a specific reason for cooling it down slower than ice will do.

I would think it all depends on the area you are fermenting in. If it's a clean area with no bugs it should be fine. I have a lot of gnats, flies and mosquitos in my area so an airlock or vented lid is a must for me.
