    Another noob hitting the panic button

    you should be able to add any fementable ( honey, corn sugar, DME/LME) to the secondary....for an IPA i'd use more malt tho. and you shouldn't even have to wait for secondary (should be able to get it into primary) ...I'm no expert tho : )

    I did one....not technically PM but it steeped 3 lbs pilsner malt (if i remember correct) just did a side by side & 3 out of people 3 picked mine over Duvel...so not bad : ) I can get my book back & post if you want ?

    Red Wine Ale

    Interesting...I was thinking of doing some sort of 1 gallon batch of beer & use some Port wine. strong & sweet...I would guess it could come out like using wine concentrate. no time now, but its nice to know it wasn't too crazy of a thought

    Chocolate Porter

    I have a book somewhere with a honey chocholate porter....looked so good it is on my to do list. I think it called for like 6 oz unsweeted baking chocholate squares melted & added to the boil. I can find the book & post the recipe if you'd like.

    Extract IPA hop suggestions...

    I have 2 oz Citra, 2 Centennial & 2 Amarillo.... I planned on using at least 1 oz Amarillo for my 1st try at dry hopping. I don't plan on using all 6 oz total & am maybe looking at making something around 50 IBUs (give or take 10). ...using 8 Lbs LME & maybe toss in an xtra Lb of DME...

    Where can i buy cheap growlers?

    use a 2 liter (or 1 liter) soda bottle....you can bottle, cabonate & give away without worry. Works like a charm !!

    More Important: Label Paper or Printer?

    I second the color laser printer on regular paper. I make various sizes for different bottles, cut them out & glue stick them on! don't print on photo/glossy paper, I would bet it would end up too thick. Also....there are special sprays at art stores use to prevent smearing, etc...on paper...

    Man, I love Apfelwein

    ...mines about 2 months in. I will probably bottle in a week or so. My possible idea for sweetening up if needed.... scoop out a spoonful or 2 of frozen concentrate into my glass & pour in my Apfelwein. should make it sweet & apple-y :) I've read damn near all the posts & don't recall...

    NB Dry Irish Stout - Stopped fermenting

    ...making the same kit as we speak. Off to a running start! Most active fermentation I've had (only my 3rd batch). I could easilly see this pretty quiet in a couple of days.

    Man, I love Apfelwein

    ...i am at about 3 weeks now & mine is just now about 90 % clear. most likely at 2 weeks it would be cloudy w/ too much suspended yeast. you could probably go by sight & bottle when you see it go clear.

    I would still double check on the DME boiling. the sugar will dissolve EASY. either way start out w/ HOT water. the can of LME will be like glue so you will need to get it softened up. you can add cold after that if you need to. the end temp should be about 80 degrees for pitching your...
