    Dark Cider

    I bought a pound and a half of strawberries, blended them to a purée and added that. It actually fermented quite quickly and violently. My first two batches of Eds apfelwine fermented slowly so I had the carboys pretty full. Needless to say the addition of the strawberries lead to a blowoff. End...

    Joe's Ancient Orange Mead

    Just started my first batch of this JAOM and followed the recipe except for the nutmeg and allspice. I think I will do another batch next week but try what was said elsewhere in this chain: zest the orange and then peel it so as to leave out the bitter white part. Can't wait to see how it turns...

    Man, I love Apfelwein

    Just made this last night. Used 2lbs of corn sugar, 3 cans of concentrate, and as much apple juice as I could fit in a 5 gal carboy ( just under 5 gal). I also threw in 3 cinnamon sticks. Put them in with about a quart of juice on the stove and simmered for a few min while I got everything else...

    hopp additions

    I do a full boil and just throw the hops in, no bag. When I transfer from the kettle I strain the wort through a sanitized strainer.
