So I made a batch of wheat beer that I plan on being Peach Wheat ... After 2 weeks in Primary, I racked onto 5lbs of peaches to sit for another 2 weeks before kegging ...
My question is, the fructose in the peaches seems to have started a second fermentation ... How will this work out...
But would adding it to the secoundary or even during kegging a few weeks before drinking work?

Does it have to be added during brewing to work out???
Ok because Lactose is Non-Ferm Sugar ... What would happen if you added a little to a nice Chocolate Stout in the Secoundary for a few weeks? ...
Do you think it would just sweeten it up a little or would it not work and add an off taste???

Ok stupid question time ... If I want the same Guiness Stout Nitro head ... Do I just carb up my Stout on 100% Nitro ... Just fill my CO2 tank with Nitro ... Or do I need both Nitro and CO2?

Ok ... so I have been waiting a while to try this beer ... so today I found a pub with a few cans ... Don't get me wrong it was a GREAT stout, nice taste and mouth feel ... However ... Chocolate, I got NOTHING ... Very very disapointed in that part ... It was not much more then a Guiness Clone...
Do you always Sparge with 168-170 F. water? ... Sorry for the stupid question ... Just learning about AG and seems like every thing I read says to use this temp range. (Guessing it is to stop the enzyme process)

New to BeerSmith ... I have a recipe I created and want to now adjust it for efficiency % so it will adjust the grain amounts I need to buy for my Grainbill. (I want to buy a little more grain to make up for lower efficiency)
Right now I have it set to 4 lbs of pale and 4 lbs of wheat at 72%...
So I have a stout that is almost done fermenting ... I was wondering ... Could I add some Vanilla extract when I keg it to give it some vanilla flavor? If so how much would you add to a 5g batch?
(I know most folks add two beans to secoundary - but I thought about this after the fact)
