    Fermentation temp California ale yeast

I think pitching low is your best bet. But I don't think that going that low is necessarily needed. Bringing it down to the low end of WLP001's recommended range will probably be adequate. It will rise to ambient and beyond rather quickly. Putting the fermenter in a keg bucket with cool...

    Repitching in the keg?

I would pitch at high krausen or shortly thereafter. Probably best to add them when they are active. I don't think your batch needs more dormant yeast.

    Fresh Yeast Vials

Lately, I’ve been noticing a large difference in attenuation between yeast vials, based upon their age. My LHS sells a lot of yeast and for the more popular yeasts, I usually get vials with manufacturing dates less than 1 week old. For me, vials this fresh have been consistently...

    Fermentis Rehydration Temperature

Why does Fermentis recommend such low rehydration temperatures for their dry yeasts? Everything I've ever read says 95-105 is optimal. But Fermentis' spec sheets recommend MUCH lower temps, generally 27C ± 3C (80F ± 6F) for ale yeasts and 23C ± 3C (73F ± 6F) for lager yeast. I understand...

    Propane burner igniter

I have a electronic igniter installed on my propane burner. The igniter provides a spark, but I can seem to get it to ignite the propane. Can anyone provide any insight to the proper way to place the sparking wire? Thanks.

    Saphir Hops

Saphire has been my go to finishing hop for the past year or so. Love them. Citrus is very subdued.

    ebay aquarium temp controller build

Finally getting around to wiring my controllers. I have several 14 gauage power cords I am thinking of using. Seems to me that 14 guage wire is sufficient. Am I correct?

    Wyeast 1099 looks strange.

I've noticed similar clumpyness when I used it. Per George Fix (cerca 1989), Whitbread is a three strain culture. (My understanding is that 1098 is an single strain isolated from the three). Fix said strain No.3's main role is to chain and floc the other two strains because they are mutants...

    Wyeast 2252. What is this?

My brewpartner and I brewed a OG 1.068 steam style beer with it at San Franciso basement temps - which is 62 degrees year round. Fermented fine. FG was 1.016. That a 76.5% attunuation. A little slow to drop out, but not terrible. Took about 1 week longer to clear than the fermenter with...
