    Cream Ale with WLP800

I have a cream ale in the fermenter using WLP800. I cooled wort to 68, pitched, and set the fermenter in my garage, which stays between 53 and 55 degrees. It's been 3 days and I have seen no activity. Is this normal? I'm guessing that the lager yeast is going to be a slower start, but how...

Too much head CAN be a bad thing!

I've done this with all of my ales and have never had an issue. Guess I just got lucky! Thanks for the tips!

Too much head CAN be a bad thing!

So if I understand correctly, disconnect my gas line and bleed the keg's headspace, then let it recarb with it's own internal gas? How long should I leave it off of the CO2?

Lots of floaties after dry hopping in corny

Why aren't you dry hopping in a secondary and then racking to your keg? That would solve all of your problems and produce a more conditioned ale.

Too much head CAN be a bad thing!

So I've been kegging for over a year now, and have a kegerator with 3 corny capacity and a triple manifold handling my CO2. I've had little to no problems until this recent batch. Here's my problem: I kegged an ale and a porter into cornys, connected to gas and set my gas to 25psi for 6...

    Porter Mash Question

Well the "step" gallon would have put me over by 1 gallon, but I took 7 gallons to the kettle with the hopes of finishing our with 5.5 to 6 gallons in the fermenter. 4 ounces of loose hops will be in the boil as well...so I think what I'm hearing is that I'll be just fine. Thanks!

    Porter Mash Question

I'm making Jamil's Porter http://beerdujour.com/Recipes/Jamil/JamilsChocolateHazelnutRobustPorter.htm and I hit my dough in with 5 gal at 170 into my preheated cooler mash tun, but I missed my sach temp of 154 a little low(151). So...I added 1 gal of 200 degree water, restarted the 60 minute...

Using wood in my secondary? Crazy, or genius?

I'm thinking of crafting up a pale ale with some smokiness to it. My thought was to buy some food grade cedar planks, cut them into small chunks, scorch them around the edges with a torch, and then rack my ale onto the wood chips in the secondary. Has anyone tried anything like this? Has...

    All Grain Hef Conditioning Questions

I recently did my first solo all grain batch, a German Hef, and am curious about a few things. 1. I missed my mash temp by a few degrees on the low side, so I assume I'm in for a lighter beer, correct? 2. My adjusted OG was 1.034, any issues with this? 3. I'm going to keg this beer, and...
