    Canadian Roll Call!!

Try Hopdawgs in Vernon bc they ship all their product. OK prices not great. I get my grain from gambrinus in Armstrong but you have to pick it up unmilled. $30 for a kit or you can piece it together for cheaper.. But not sure on shipping to Calgary. http://hopdawgs.ca/Kits/Partial-mash-kits

    Starsan + Hops = F(sk)unky smell

Being that starsan has a low pH and there are sulfur compounds you are probably smelling a small amount of H2S. It is detectible in the ppb (part per billion) range. H2S smells like rotten eggs and is deadly but not at the levels you would see cleaning. Cheers.

    Primary only vs. secondary

my primary is a cheap 10 gallon bucket which doesn't seal very well. I tried a primary only, got an infection probably from the fly that found its way in. I'll be using one of my glass carboys for secondary after 5-6 days of primary with a bubbler as i know they won't get any nasties in it.

    Quick question about degassing

wondering if you might suck o2 into the vessel and if that would have an effect on oxidation? but i would expect that as long as you waited it would remove alot of the c02. I think a small gental paddle stir would be easier though. If you try it let me know how it works

Added 5lbs of fruit 60hrs ago and fermentation has not restarted. What do?

how did you add them? finely diced/puree or whole? need to break down the cell walls a bit to get the sugars out (i think). I've herd of freezing to help this as the frozen water in the cell will puncture the cell wall.

    Yeast question for Kolsch

Thanks, I down loaded a water calculator. That is a big help, it looks like i should add 2-2.5g of CaSO4 and 3.5-4g of CaCl2 along with 2-3ml of acid. which gives me a Cl to SO4 ration of 1 and a pH of 5.48 without to much Ca (100ppm), Would 2.5ml of lactic acid change the flavour at all...

    Greetings from Canada!

Cheers from BC. 33.40 is a good deal. Straight from gambrinus in armstrong is $25 so they haven't marked it up that much.

    Yeast question for Kolsch

Hey i am a new ag brewer and want to try a Kolsch. My LHBS sells WLP 830 and W-34/70 but they do not have WLP 029 or 2565. Would either of these two yeast work for a Kolsch recipe? my ferment room is 58F and i could swamp cool more if needed. Any advice would be great thanks,

    Just a little Foam !

No all grains have oils/fats. 7-8% is normal in oats. between the fat and the extra protien probably adds to the mouth feel. Also oils hate water so will cling to the solids (hop pellets) during boil and the grains/husks during mash.
