    soonest you've kegged a hefeweizen?

    8 days. tasted great. But i find that all my beers, including wheats, need about 5-6 days in the keg to taste right. Even if I force carb at high psi for the first 2 days.

    I'm not sure you'll notice much difference from 70 to 68 F. Either should be fine. Temp is most important during active fermentation, and yours is already done with that. At this point, you can leave it at 64 or put it at 70. give it a week or so and bottle/keg it.

    just my $.02 but I'd use a hefe yeast like wlp380. my basic, standard hefe recipe is 6# Bavarian wheat dme with .5 oz hallertauer at 60 at .5 hallertauer at 10 and wlp380. very basic, but with that yeast it is tasty.

    Brewing in Porcelain pot

    I have one similar to this (but smaller). It takes a while to come to a boil because the bottom is concave (at least on mine). I have made many batches and have not had an issue. I usually boil 3 gallons for 5 gallon batch. Bringing 5 gallons to a boil on an electric stove may be an issue.
